Recipe Round Up 6: Super Salmon

I heard you loud and clear, IG fam! Salmon recipe round up? GREAT idea. Not only is salmon a fantastic source of many essential nutrients such as protein, omega-3 fats, and Vitamin D, it also tastes incredible! Don’t believe me? Try THESE recipes to flavor and cook your next salmon dinner.


Simple, Super Salmon
Most people don’t like their fish to taste fishy, and I totally get that. This quick glaze (or marinade, depending on how you want to use it) shared by Chef Savvy removes that fishy taste and replaces it with sweet, powerful flavor. You could swap in soy sauce in place of the lemon juice here if you’d like – the key is to have an acid such as citrus, vinegar, or soy sauce. Instead of pan frying, you can also marinate the salmon fillets in a bowl of this mixture for 15-20 minutes and then bake at 400° for about 20 minutes, baking the marinade with it and covering with foil.

A Little Fancy, Still Simple: Orange Walnut-Thyme Crusted Salmon
Necessity is the mother of invention, right? When I first followed this salmon recipe from Eating Well, I had to swap out a few ingredients. My garden’s rosemary did not flourish like I’d hoped this year and I was out of lemons. But the good news is that I had oranges – a great citrus substitute for salmon – and thyme also goes great with salmon! Therefore, following this recipe but swapping orange for lemon and thyme for rosemary, I created a delicious, incredibly flavorful and herby entrée. The Dijon mustard really adds a punch of flavor that masks any hint of classic “fish” taste.

Salmon On The Move, Or Not: Foil Packet
I’ve shared some other delicious foil packet recipes from previous recipe round up posts, but this one deserves a special shout out in the salmon round up. You can make it ahead and take this one for a weekend in the woods or simply toss it on the grill or in the oven to cook at home and enjoy the zero baking dish clean up! You can pick your level of heat here – I’m not one to usually go for jalapeños – but regardless of your pepper choice, the pineapple and cilantro alone provide the salmon with a huge burst of tender, tropical flavor after cooking over top of it in the foil packet.

Doesn’t Look Like Regular Salmon: Quinoa-Salmon Muffin Cakes
I’ll admit – this recipe shocked me, but Eating Well has done it again. I anticipated that it would be decent and worth making once just to try during weekly my meal prep, but I was blown away by how flavorful and appealing these quinoa-salmon muffin cakes are! They’re very easy to make using salmon packets (think Starkist) instead of fresh fillets and when combined with the dressing over some salad greens, they’re an unbeatable, perfectly portioned main dish that will leave you wondering how you didn’t know about this combination before!
