Recipe Round Up 3: CocoNUTS

I’ve been on a strange coconut flavor craze lately. Maybe I’m in need of a tropical vacation – any funders out there? While I daydream about sipping Piña Coladas on a beach somewhere, read below for a few coconut-inclusive recipes I’ve been loving lately.

 An Easy Breakfast: Carrot Oat Coconut Muffins

I’m a big fan of quick grab-and-go breakfast items to take with me to work, and these muffins are a perfect option. They include fruits, veggies, and whole grains all in one bite! I used shredded carrots and stuck them in the food processor for a few pulses to get them even more diced up. I also used shredded unsweetened coconut instead of flakes and extra virgin olive oil instead of coconut oil, simply because it’s what I had. These will definitely become part of the regular breakfast rotation!

Next, a Snack: Coconut Steel Cut Oatmeal Energy Bites

Energy bites, also known as protein bites, are SO versatile and easy to make! They’re also an easy way to get little ones involved in food prep – have them help mix the ingredients and roll the balls! So many ingredients can be swapped in and out of these recipes, but this version celebrating instant steel cut oats, peanut butter, shredded coconut, and dark chocolate chips was just what I needed to keep my body fueled for my increased exercise as I train for an upcoming race. Whole grains, healthy fats, protein, and lots of flavor!

 
 

Lastly, for Dinner: Chickpea-Stuffed Sweet Potato with Coconut Kale

This was surprisingly delicious. Looking at the ingredient list, I knew I liked all of these foods but I never would have combined them like this without this recipe! I overcooked my sweet potatoes a bit and they peeled right out of the skin, so I couldn’t “stuff” my potato skins for the final plating presentation, but this took 0% away from the flavor and compliments I have for this dish. It was simple to make with very few steps but produced a complex coconut curry flavor that made for healthy, delicious dish with Indian flair! In my dish, I used orange juice instead of grapefruit juice and used regular unsalted cow butter instead of vegan butter.
